Our story
Nestled in the village of Polykastano, deep in the Voio mountains of Western Macedonia, Marron was born from a simple desire — to gather people around a table that feels like home. The building breathes stone and timber. The light shifts with the seasons. The menu follows what the land gives. We are not trying to impress — only to nourish, to warm, and to linger.

Marron is open from the morning and operates as a restaurant & café-bar, so you can enjoy it however suits you. We serve hot and cold beverages, local herbal teas, as well as drinks and ready-made cocktails in individual servings. Whether you are a hotel guest or a visitor to the area, you will find a space that receives you with calm, warmth, and the feeling that everything is just right.
Flavours With Local Character
Our breakfast is built around local products: fresh eggs, selected charcuterie and local cheeses, local honey and homemade jams. For lunch and dinner, our kitchen follows the seasons: the menu is shaped by available ingredients, so that each dish is as good as it can be at that time of year. The menu typically includes 6–7 starters, 2–3 salads, 6–7 mains and 1–2 desserts, with children's dishes available off-menu on request. In the warmer months, the outdoor pool becomes your corner of relaxation — a cool break before dinner at Marron. Here, rest is part of the destination — all year round.

Our kitchen follows the rhythm of the mountains — calm, deliberate, grounded. Every dish carries the memory of a grandmother's hands, the smoke of a wood fire, the cold clarity of high altitude air. We cook what the season allows and what the land remembers.

The hearth is the heart of Marron. Lamb, pork, and wild game in season — prepared with patience over live fire. Smoke-kissed and deeply flavoured. Served simply, so nothing is hidden.

Mountain honey, walnut, yogurt. Tarts made with fruit from local vendors, creams scented with wild herbs, and a strong Greek coffee to end slowly — the way evenings here always end.
